Very beautiful spring salt produced with a lot of manual work. The source and salt marshes of Sal Ancestral are located in Navarre, northern Spain, at the foot of the Urbasa Andia Natural Park. The salt is particularly rich in minerals (over 84) due to the time during which the deposits were formed in the spring (Late Triassic) and the fact that the final product is neither washed nor altered.
3 reasons make the salt flats so exceptional: the origin (a sea that fossilized 220 million years ago), the location (700 meters above sea level) and the 100% manual harvesting method. Thanks to the sun, the water evaporates and leaves salt. Depending on its intensity, different types of salt are produced. The production depends on the temperature, so the product remains seasonal. The salt works are only open in summer.
